This salad can probably be ordered at all fish restaurants. It is also often prepared for family lunches or gala dinners.
If you buy octopus at the fish market, make sure it is fresh, which can be easily checked: the octopus must smell of the sea, its skin should be moist and free of mucus, and the meat should be firm and tough.
Ingredients
Dough:
- octopus weighing approximately 2 kg (for 4 people)
- 2 onions
- 6 cloves garlic
- 1 bay leaf
- salt to taste
- olive oil
- vinegar
- bunch of parsley
- 2 potatoes (optional)
- 2 tomatoes (optional)
Preparation:
It is good to clean fresh octopus immediately and use it the same day.
If you prepare it a few days later, the octopus should be cleaned immediately and stored in the refrigerator for a few days in a covered container. You can store frozen octopus in the freezer in an airtight container for a maximum of two months. Turn the octopus inside out and remove the entrails without touching the legs. Return the octopus to its original position, remove the eyes and teeth from the limbs and peel the outer membrane, then wash well under running water. Place the octopus in a pot of water with the main one towards the bottom so that the arms are facing the surface. Do not salt the water, and in order for the octopus not to remain tough after cooking, add one cork to the pot, if cooked fresh, while frozen it will never be tough. Boil the octopus in water with a bay leaf, one onion and 2-3 cloves of garlic for at least an hour,
Take the octopus out of the water and let it cool. When it is cold, cut it into cubes and rings. With octopus prepared in this way, you can add two boiled potatoes and tomatoes, and season with olive oil, finely chopped garlic, onion, vinegar to taste.
