Ingredients
- sea bass or arbun, you will need 1 kg of fish for 4 people or half a kilo for 2
- olive oil
- parsley, daisy, rosemary and thyme (mixed)
- 1 bay leaf
- 1 fennel root, finely chopped
- 1 to 2 halved lemons
Preparation
Preheat the oven to 190 degrees (gas to 5). Rinse the fish, drain and place in a shallow pan – pour a little olive oil over it. Fill the fish with herbs and fennel. Season well and sprinkle well with olive oil. Also grease the pan with oil beforehand so that it does not stick.
Heat a little olive oil in a pan and fry the sliced lemons for a few minutes face down. Transfer them to a baking sheet and place around the fish. Bake everything together for 20-30 minutes or until the fish is cooked (look at the fish, the meat should be opaque). Serve the fish on a large oval surrounded by roasted lemons.
