A juicy chocolate and olive oil cake is something that is hard to beat… The author of the recipe advises leaving it in the fridge overnight to combine all the flavors, but if you can’t stand it, it’s just as delicious if served right away with a little whipped cream…
Ingredients:
- 12 tablespoons cocoa powder
- 16 tablespoons sugar
- ½ teaspoons of salt
- ¼ teaspoons baking powder
- ¼ baking soda
- 175 ml of olive oil
- 3 eggs
- 1 egg white
- 1 tablespoon vanilla extract
- 70 g of flour
- 115 ml of boiling water
- Whipped cream for serving
- Chopped hazelnuts (walnuts, almonds…) for serving

Preparation
Preheat oven to 160 degrees
Line a baking sheet with greaseproof paper.
In a large bowl, mix together, sugar, salt, baking powder and baking soda.
Add oil, eggs, egg whites and vanilla and mix. Add flour, do not mix too much. Add water and put everything in a baking dish.
Bake for 25-30 minutes.
Allow the cake to cool for about 10 minutes before removing it from the pan.
Serve hot or cold with whipped cream and hazelnuts.
